Today I got black corn, it's has anti-inflammatory and antioxidant benefits. Black corn contains essential nutrients such as iron, thiamin, magnesium, vitamin A... also adds a nice texture in this "corn pancake dessert" . We eat it as a dessert or my kids eat it as a snack! #chinesefood

300g Corn (Blanched in the water)
40g Glutinous rice flour
35g Corn starch
1 1/2 cup Cooking oil
4-6 tbsp water (adjust)
Sugar (optional for sprinkle in the end)
Or dip in honey any sauce you like:) such as condensed milk!

Mix the corn, glutinous rice flour, corn starch together, add water little by little until you see the sticky mixture. Then add about 1 tbsp cooking oil on a pan, when the oil is hot pour the corn mixture in, flatten by a spatular, turn the heat medium low. Pan fry for about 2-3 minutes, pour over hot oil to fry until crispy.
